Tilapia Stew with Yam

Ingredients:

– 2 tilapia fillets (skin-on)

– 1 yam tuber, peeled and cut into cubes

– 4 fresh tomatoes

– 2 scotch bonnet peppers

– 1 large onion, chopped

– 1 tablespoon tomato paste

– 2 cloves garlic, minced

– 1 teaspoon thyme

– Salt and pepper to taste

– Vegetable oil

 

Instructions:

 

  1. Prepare the Yam:
    Boil the yam cubes in salted water for about 15-20 minutes until tender. Drain and set aside.

 

  1. Prepare the Stew:
    Blend tomatoes and scotch bonnet peppers until smooth. Heat oil in a pot, add onions, and sauté for 3 minutes. Stir in tomato paste and cook for another 5 minutes.

 

  1. Add Tomatoes:
    Pour the blended tomatoes into the pot, add thyme, garlic, salt, and pepper. Let it simmer for 15-20 minutes until the stew thickens and the oil rises to the top.

 

  1. Cook the Fish:
    Gently place the tilapia fillets into the stew and simmer for 10 minutes until the fish is fully cooked and infused with the stew’s flavors.

 

  1. Serve:
    Serve the tilapia stew with boiled yam on the side for a hearty, satisfying meal.
