Grilled Nigerian Tilapia with Pepper Sauce

Ingredients:

– 1 whole tilapia (fresh or frozen), cleaned and scaled

– 2 tablespoons vegetable oil

– 1 tablespoon paprika

– 1 teaspoon thyme

– 1 teaspoon garlic powder

– 1 teaspoon ginger powder

– Salt and pepper to taste

– 1 lemon, sliced

For the Pepper Sauce:

– 4 fresh tomatoes

– 3 scotch bonnet peppers

– 1 large onion

– 1 clove garlic

– 2 tablespoons vegetable oil

– Salt to taste

Instructions:

  1. Prepare the Fish: Score the fish on both sides and rub with vegetable oil, paprika, thyme, garlic, ginger, salt, and pepper. Marinate for 30 minutes.
  1. Grill the Tilapia: Preheat your grill to medium heat. Place the tilapia on the grill and cook for 6-8 minutes on each side, until fully cooked and crispy. Squeeze lemon juice over the fish while grilling.
  1. Prepare the Pepper Sauce: Blend tomatoes, peppers, onion, and garlic until smooth. Heat the oil in a pan, pour in the blended mixture, and cook for 10-15 minutes until it thickens. Add salt to taste.
  1. Serve: Serve the grilled tilapia with pepper sauce on the side and garnish with lemon slices. Pair with rice or roasted plantains.
